I've rebuilt all three carbs on my 1999 Mercury 40 hp 3-cylinder. Changed water separating filter and inline filter, flushed all fuel lines before mounting carbs back onto the motor. Hooked everything back up as should be, primed fuel to them and it cranked on 2nd pull!! My problem is its idling at high rpms and won't idle down? What do I need to adjust to get it right????

Just my 2 cents.
Since you have had the carbs off, I'm guessing one of them is sucking air at the mounting base/flange. Bad gasket or warped carb mounting flange and or not torqued properly.
You can lay a straight edge across to see how flat the mounting surface is and or use another proper gasket(maybe even use some form of lubricant on the gaskets.
Probably not an adjustment.
